Iceland Elveries

Ok! Ok! Get ready to be whisked away into magical nonsense. I'll give you a few minutes to prep yourselves... FIRST, I'll give you a little update on my whereabouts.

1.) I think I have graduated College.

2.) I am back in Minneapolis

3.) I am baking at Cooqi (the gluten-free, organic, locally oriented, and all that sort of stuff bakery) again, for the summer at least...

4.) I have a few future plans... however, those will be kept under wraps until finalized! :)

ICELAND



When you think of Iceland, what comes to mind? Ice?

Well, yes... I guess there is definitly some ice here and there, but this beautiful island is actually a massive battle between Fire and Ice, home of volcanos and glaciers... interesting, right?

I think it is truley the most beautiful, and awe-inspiring place my eyes have ever seen.

I went with my friend Russ on May 11th-15th, but we only had 3 actual days to travel the country so we rented a car, found a map, icked up some groceries, and took off for the southern half of the Island... the red line on the map below indicates where we drove... we actually ended up covering almost half of the outer island...

I have never seen so many different geological features in such a small amount of time! It was just ridiculous… if you looked down for 10 minutes, and then up again (while driving) the scenery always seemed to look completely different: Waterfalls… lots of them, mountains, glaciers, black sandy beaches (from lava,) the biggest waves I have ever seen, green grass, moss fields, rock fields, lava fields, tributaries, volcanoes, rolling hills, no trees, flat land as far as you can see, the clouds were crazy, snow, ice, wind storms, mysterious fog. WOW! … and I am probably forgetting some…
